It sounds to me like everything in China is at your own risk, and that an Z visa is no safer than an F visa.

Even if you have an F visa, the school can withold payment or mislead you on the apartment or working conditions.

But because of the contract, you can't walk, or if you do you lose your payment.

And even with a contract and a Z visa, the foreigner will lose in court.
