I don't think "O Captain, My Captain" is too advanced for younger audiences, although 7th grade may be a little overwhelmed by it. I teach an abridged version in the 9th grade that includes around 4-5 stanzas. If you really want to teach symbolism, use a poem that uses one major symbol in the 7th grade.
