Shannon,
Working with a Visually Impaired Student who is learning English as a Second Langauge requires the teacher to modify the way they teach that student. Specifically, the teacher needs to remember that the student doesn't have the ability to use all three learning modalities- auditory, visual and kinesthetic. Thus, all activities and lessons have to utilize the auditory and kinesthetic modality.
For example, when teaching vocabulary words, the teacher would have to use realia, i.e. objects in order to teach a word. If you are teaching a lesson on fruits, for the visually impaired student you would have to use real fruits that the student could smell, taste and touch.
Suggestion: You might want to go to other teacher websites and look for activities or lessons geared especially for special needs students.
