Good questions.

The first part of your grammar problem would be explained as you presented it. English is the non-count noun, and 101 would be the quantifier

Same for the other parts of the question you mentioned.

Regarding the phrase you mentioned, in this instance,the use of the noun-count noun Cancer in the phrase is being presented as a Colloquialism.
Good job in understanding how to explain grammar to your students!
