Eric,
Elephant gave you some great ideas as to how to prepare for your first class.
Here is an other suggestion:
You might want to consider having the students do an interview of each other. You can pair them off, and have each student interview their partner. Then, each pair could go to the front of the class and introduce each other to the class. This way, you will get to know something about the students, and also gain some insight into their Oral Language Fluency Skills.
