Hey kelsi:

I have a similar challenge in my class too. however, my group is very mixed in ability levels. it,s hard not to bore the more advanced and literate students and not to overwhem those struggleing with literacy issues.

i just have them work on a lot of phonics and do a lot of spelling tests. I do a list every week of a word family (ie. shack, pack, snack, crack) When I give the test I do whole dictation sentences for the more advanced while I give the non literate students a test sheet with blanks for every letter of every word. durring the week we do lots of practice exercises and game usualy verbaly.

I have also discover a great series of adult esl reading books called TALK OFF THE BLOCK from New Readers Press. These are great! The advanced students work on fluency while the non literate students get to work on sounding out the words.

otherwise, be very careful not to do too much writing, and when you do write all answers on the board in clear logical ways so that the students with literacy issues can at least attempt to copy.
